The Second Cook
was usually the baker. He was responsible for the breads, pies, cakes,
pastries, and cookies that were so plentiful aboard the ship. The Second
Cook would usually start work early (0400-0500), so that a fresh batch
of doughnuts and pastries would be ready for breakfast. He also made
salads and relish trays and served the Officers'
Dining Room. Like all members of the Galley
staff, he helped attend to the linens, groceries, and cleanliness of
          this area.
