The Steward oversaw
the operations of the Galley. He prepared
all the main courses, soups, menus, and also ordered supplies and linens.
Arguably the most important person in the crew, his job was to feed
the crew as economically as possible, but still offer the quantity and
variety of food for which freshwater steamboats had become famous. Sailors
led a somewhat lonely, isolated life and good food helped make them
happy.
